Carol from Everything Home With Carol has six children ranging in age from 11 – 27 and 1 grandchild. Even though she and her husband grew up in town they decided to change their lives and the lives of their children about 14 years ago by moving to the country. They have tried to live a self-sufficient, sustainable lifestyle as much as they can since then. Carol tried once a month cooking in order to make dinner time less stressful, but found that it took a full day to shop, a full day to cook, and then a full day to recuperate so she looked for ways to make food ahead that would fit with her lifestyle.
You can learn more about it in her book Homestead Cooking With Carol: Bountiful Make-Ahead Meals. This book takes the reader through the steps of planning what to plant and what to do with the harvest as it comes out of the garden. However, the principles in the book apply to anyone, especially those that can buy in bulk ahead of time.
Listen to hear why Carol believes that the little bit of extra effort when the harvest is coming in is worth the time to make the harvest last through the year. Carol shares some simple ideas for breakfast and lunch, how she prepares good meals ahead of time for busy days so she’s not caught off guard, a great tip for having fresh, warm cookies every day, how she cans the miscellaneous small amounts of harvest from her garden, and how she cooks and uses chicken feet!
