Ah. Fermenting. This is the first time in a while that I haven’t had something tucked away in a cabinet. I’m having a really hard time deciding what to try next, especially considering what I really want to try again is pickles and I can’t find the right kind of cucumbers this time of year.
Fermented Carrot Sticks – Round 2
Remember my first carrots? Yea. Not good. This time around I let them ferment 2.5 weeks then refrigerated them for 2 weeks. I opened them yesterday and had one. Not bad! I wouldn’t call them my favorite snack, but I’ll probably eat one now and then for a snack because I know they’re good for me. My kids really didn’t like them. I think they’d be great shredded in a salad or slaw.
I’m thinking it takes a while to acquire a taste for fermented veggies.
Fermented Pickles – Round 2
I couldn’t find pickling cucumbers this time around. Seems they’re really a seasonal treat. So, I tried those little hot-house garden cukes. I used a tea bag for tannins since we don’t have grape leaves this time of year either. The pickles fermented on the same schedule as the carrots. But, they turned a funny color and when I opened the jar I started sneezing! I decided we shouldn’t try to eat them. I left the unsealed jars on the counter overnight, intending to toss them in the compost today and when I woke up this morning both jars had mildew growing all over the tops. So glad we didn’t try to eat those!
What to try next?
I’m thinking I want to try and make some apple cider vinegar and maybe some fermented spicy mustard! Anyone have good tips or recipes? Please help me out here and leave a link in the comments!
