6 Simple Avocado Recipes

Avocados contain fats that are considered to be healthy for your body, even though ¾ of an avocado is made up of these fats, they are still beneficial. They have around 4 grams of protein, only .2 grams of sugar, vitamins K, B9, B6, B5, C, and E. with 11 grams of fiber on top of all of this goodness, you’ll have almost half of your daily fiber intake by eating a single avocado. Besides being excellent for making good stuff to eat and as a salad topping, these green beauties are also useful in making face masks as well!

Beginner’s Guacamole

3 Avocados
1 C Salsa
½ C Cottage Cheese

Optional Additions:
1 Clove Garlic
2 T Cilantro (finely chopped)
2 Jalapeño Chilies

Peel the avocados and mash them up. Drain the cottage cheese and stir it into the avocados. Use your favorite salsa and mix it in with the rest of the ingredients. Add a bit of salt and/or pepper, if needed. You can also use a ¼ C sour cream in place of the cottage cheese. For a thicker guacamole, omit the cottage cheese and add an 8oz package of softened cream cheese.

Guacamole Soup

1 can (18oz) tomato cocktail juice
½ C Onion (chopped)
2 Avocados (diced)

Heat the tomato juice and onion for 5 minutes or until hot. Stir in ¾ of the avocado and continue to heat. Remove from heat, add the rest of the avocado to the top of the soup and serve.

Creamy Avocado Soup

4 Avocados
1 ½ C Heavy Whipping Cream
2 (14oz) Cans Chicken Broth
¼ C Dry Sherry

In a blender, add 2 diced avocados and ¾ C whipping cream and mix thoroughly. Repeat this process with the rest of the avocados and whipping cream. Bring chicken broth to a boil, lower the heat, and add the avocado puree. Stir in salt and sherry and chill before serving.

Avocado Butter

2 Avocados
2 T Lime Juice
1 lb Butter
¼ tsp Ginger (powdered)

Combine everything in a blender or food processor and mix until smooth. This butter can be used on party crackers, bread for finger sandwiches, or as a dip for bread sticks.

Avocado-Onion Dip

1 (1oz) Package Dry Onion Soup Mix
1 (8oz) Carton Sour Cream
½ C Mayonnaise
2 Avocados
1 T Lemon Juice

Mash the avocados and mix everything together. This dip is great on wheat crackers.

Avocado & Green Bean Salad

2 (15oz) Cans French-cut Green Beans
8 Green Onions
¾ C Italian Salad Dressing
2 Avocados
1 (8oz) Can Artichoke Hearts

Drain the green beans and chop onions before placing them in a serving dish. Pour dressing over this mix and chill overnight or for a few hours. Right before serving, stir in chopped avocados and chopped artichoke hearts.
